Fall in love... baking with my love...

This past weekend Justin and i had the chance to spend some time just relaxing at home doing whatever. This fall we bought a CSA fruit share from an heirloom apple and peach orchard. This week we ended up with a ton of peaches and i suggested we try peach muffins! I am not one to jump on the cooking dinner train but i dont mind baking a bit here and there, Justin on the other hand went to culinary school and works all day in a kitchen but not so much baking either. So we tried a new recipe and threw in some yummy peaches and they ended up rocking our socks!

{Peach Muffin Recipe}
3 Cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup plus 2 tablespoons sugar
1 stick butter,softened
2 large eggs
1.5 cups plain greek yogurt
1.5 cups chopped fresh peaches

We followed the directions of Threemanycooks for the most part. We used baking cups instead of greased pans and ours varied in size a bit :)  

1. First mix the flour,baking powder, baking soda, and salt together and set aside.

2. In a bowl mix the chopped peaches with 2 Tablespoons of the sugar and set aside.

3. Next mix the butter and sugar until creamy with an electric mixer.

4. Alternating thirds incorporate the yogurt and dry ingredients to the butter,sugar mixture. Once combined lightly mix peaches into the batter.

In well buttered 1/2cup muffin pans fill 12 cups with the batter. The recipe states that they will be full and the batter will be used up. We used baking cups since we had some on hand and ended up with about 18 smaller muffins. 

Bake at 375 for 12 mins for smaller muffins or 18 mis for medium/large sized muffins(ours were about medium and took 17 mins)

Even though our baking was a bit disorganized and we changed a few things here and there we came out with some rockin peach muffins that were moist and not too sweet perfect for breakfast or right now!
